Those puffy, sticky white cubes known as marshmallows are a staple for camping trips, hot cocoa and desserts, but they aren’t a healthy food choice.Too much sugar in the blood can bring to severe health issues:

  • Insulin resistance and diabetes
  • Heart disease
  • Cholesterol levels
  • Several cancers, such as pancreatic cancer
  • Food addictions
  • Teeth issues, like cavities

We suggest this simple way of healthy preparation of the marshmallows.

  • 1/2 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 1/2 tablespoon gelatin
  • 1/2 cup cold water

In a medium bowl, pour quarter cup of water and add the gelatin over it.

You should grease a loaf pan a bit, and cover it with parchment paper and grease it as well.  Then, add another quarter cup of water, the salt and honey in a small pot and place over medium heat. Bring the mixture to 240 degrees. This temperature is reached in 7-8 minutes.Add the hot syrup to the gelatin mixture carefully, using a hand mixer on low.A genuine quality produced food gelatin has rather quite high protein content; it contains around 86% of protein. Pour the hot mixture in a side of the bowl.

Add the vanilla, and beat for 15 minutes on high speed, in order to get a thick mixture. Vanilla is a flavoring derived from orchids of the genus Vanilla, primarily from the Mexican species, flat-leaved vanilla. Scrape into the prepared pan and set it aside uncovered, for 4-12 hours. Cut it in pieces and is ready to be served.

You can use some cocoa powder to roll the cut marshmallows or toast a half cup of coconut flakes and put it on the bottom of the pan.Cocoa solids are a mixture of many substances remaining after cocoa butter is extracted from cacao beans. This premium dried coconut contains no additives or preservatives, and is not sweetened.

Buon apetit !
