- 7 glasses of coconut water (fresh)
- 5 tablespoons of kefir grains
- 1 Ceylon cinnamon stick (to flavor the drink)
Note that you can find kefir grains in organic supermarkets.
Pour the coconut water in a 2L glass jar. Then add kefir grains and cinnamon stick. Cover (or close) the jar for 48 hours. It is important not to let it ferment longer because the jar may explode. At the end of the fermentation the kefir grains will be up to the surface of the water in the jar. You will be able to remove them. Avoid throwing kefir grains after removing them from the jar, you can refrigerate in another jar and use them to prepare new kefir coconut water.
